MMMMM…The smell of sweet homemade organic apple mascarpone pie is lingering in our home!  Is there any better smell than the crisp autumn air and the sweet smell of fresh homegrown organic apples??!!

Are you drooling yet?!  We are!  Autumn is our family’s favorite season. The crisp air, the sweet smell of organic apples, concord grapes, and raspberries, the beautiful changing colors of the leaves, and pumpkins! What is there not to love??!!  Fall is a time of harvest, a time of new beauty, and a time of family fun for us!

Our family has so many treasured memories of fall.  Our two daughters were born in October and November.  Our birthday’s are also in October and November.  Walks in our woods enjoying both the scenery and the wildlife, fun climbing the trees, enjoying the pumpkin farm, hayrides, harvest, Halloween, football, and of course spending time in the kitchen together creating wonderful Autumn treats!

In our opinion, there is no comparison to our homegrown organic apples!  They taste so different, so sweet, so crisp, and just the best apples ever.  Yes, we purchase organic apples from the grocery store, but they still do not compare to our homegrown.

Let’s talk about nutrition!

Organic apples are some of the most popular and delicious fruits on the planet, and there is nothing like biting into a bright, red, juicy apple to quench your thirst and satisfy your sweet tooth, all while boosting your health in a major way.

The health benefits of apple include improved digestion, prevention of stomach disorders, gallstones, constipation, liver disorders, anemia, diabetes, heart disease, rheumatism, eye disorders, a variety of cancers, and gout. It also helps in improving weakness and provides relief from dysentery. Apples also help in treating dysentery. Furthermore, they can prevent the onset of Alzheimer’s and Parkinson’s disease. Finally, they aid in dental care and skin care.

Organic Mascarpone Apple Pie

Butter Crust Ingredients:

  • 2 1/2 C Organic All-Purpose Flour
  • 1 tsp Pink Himalayan Salt
  • 1 tbsp Organic Cane Sugar
  • 1 C (2 Sticks) Icy Cold Organic Unsalted Butter
  • 1 Measuring Cup (2 C Size) filled with Icy Cold Water & Ice Cubes

Organic Cheese Layer Ingredients:

  • 8 oz Organic Mascarpone cheese
  • 8 oz Organic Cream Cheese
  • 1/3 C Organic Maple Syrup
  • 2 tsp Organic Vanilla Extract
  • 1 Organic, Free-Range Egg

Organic Apple Layer Ingredients:

  • 4 Large Organic Granny Smith Apples
  • 1/3 C Organic Maple Syrup
  • 3 tsp Organic Ground Cinnamon; separated
  • 1 tbsp Organic Cornstarch
  • 2 drops YL Lemon Vitality Essential Oil
  • 1 C Organic Pecans; chopped
  • 1 tsp Ground Cinnamon
  • 1/8 tsp Pink Himalayan Salt

Instructions:

  1. Preheat over to 350 degrees.
  2. Fill your measuring cup with water and ice cubes; place in refrigerator.
  3. Cut your butter into small chunks; place in refrigerator.
  4. Mix flour, salt and sugar together in a bowl.
  5. Cut butter into dry mixture with a pastry cutter or a fork until you have a crumbly dough.
  6. Remove icy water from refrigerator and add a tablespoon at a time to your crust until you have a well incorporated dough ball. We usually add 13-15 tablespoons of water for the perfect consistency.
  7. Split the dough into 2 balls; wrap in parchment paper and place back into the refrigerator.
  8. In a mixing bowl, beat cheeses and maple syrup on medium-high speed until smooth.
  9. Add vanilla and egg; Beat until smooth. Scrape down sides if necessary.
  10. Remove one ball of pie crust from refrigerator; roll out and place in the bottom of the pie dish.
  11. Pour cheese mixture over pie crust. Set aside.
  12. Peel, core, and slice apples extra thin, and place them in the same mixing bowl along with 1/3 cup maple syrup, 2 tsp cinnamon, cornstarch, and Lemon essential oil. Fold with a rubber spatula until combined.
  13. Spread evenly over cheese layer in pan.
  14. Sprinkle pecans, remaining 1 tsp cinnamon, and salt over the top of the apples and drizzle lightly with additional maple syrup.
  15. Take out remaining ball of dough; roll it out and make long strips to make a lattice pie top. Place over apple mixture.
  16. Place in oven and bake for approximately 30 minutes.
  17. Cool for 15 minutes before serving.
