Famous Organic Pumpkin Streusel Muffins

Ingredients:

  • 2 C Organic All-Purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Organic Baking Powder
  • 1 1/2 tsp Organic Ground Cinnamon
  • 1/2 tsp Organic Ground Nutmeg
  • 1/2 tsp Pink Himalayan Salt
  • 15 oz Organic Pumpkin Puree
  • 1/2 C Organic Unrefined Coconut Oil; melted
  • 2 Organic, Free-Range Large Eggs
  • 1 C Organic Cane Sugar
  • 2 tsp Organic Vanilla Extract

Streusel Topping Ingredients:

  • 1/4 C Organic All-Purpose Flour
  • 1/4 C Organic Cane Sugar
  • 2 tsp Organic Ground Cinnamon
  • 2 tbsp Organic Old-Fashioned Oats
  • 1/4 C Organic Walnuts; chopped

Instructions:

  1. Preheat Oven to 350 degrees.
  2. Line a muffin pan with parchment muffin liners.
  3. In a medium bowl; whisk together all of your dry ingredients until blended.
  4. In your Kitchenaid Mixer fit with the paddle attachment on low; mix all wet ingredients together until combined.
  5. Slowly add your dry ingredients into your wet ingredients. Mix until just combined. DO NOT over-mix.
  6. Fill the muffin cups with batter until they are approximately 2/3 full.
  7. Top with a tablespoon full of your streusel topping.
  8. Bake for approximately 15-20 minutes or until a toothpick inserted in the middle of the muffin comes out clean.
  9. Cool on a baking rack.
  10. Enjoy!

Streusel Topping Instructions:

  1. Using a fork or your fingers; mix together all ingredients until they are combined and crumbly.
