We have incorporated organic sweet potatoes in every course; especially dinner. Don’t get us wrong, we still love our organic russet potatoes, but we have enjoyed replacing them with sweet potatoes! There is nothing like baked sweet potato fries, baked sweet potatoes, and sweet potato home fries!
If you want to get your children to eat sweet potatoes, this is a good way to start! Our daughters absolutely love it!
Did you know that organic sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid, and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2, and phosphorus.
Like the common potato, sweet potatoes also have anti-inflammatory properties, although they do not belong to the same family as common potato. This is primarily due to the presence of beta-carotene, vitamin-C and magnesium. It is equally effective in curing internal and external inflammation.
They are also packed with other nutrients that include vitamins as well as provide phytosterols, isoflavones, and amino acids such as leucine, glutamic acid, and threonine. A single serving of sweet potato alone will provide more than 400% of your daily dose of vitamin A!

The Yummiest Sweet Potato Casserole EVER!
Ingredients:
- 3 Organic Sweet Potatoes; peeled and cooked
- 2 Organic Free-Range Eggs; beaten
- 1/4 C Organic Milk
- 1/3 C Organic Maple Syrup
- 1 tsp Organic Vanilla Extract
- 1/2 C Organic Unsalted Butter
- 3 Drops YL Lemon Vitality Essential Oil
- 2 Drops YL Cinnamon Bark Vitality Essential Oil
Topping Ingredients:
- 1 C Packed Organic Brown Sugar
- 1/3 C Organic All-Purpose Flour
- 1 C Organic Chopped Pecans
- 1/3 C Organic Unsalted Butter; melted
- 3 Drops Cinnamon Bark Vitality Essential Oil
Instructions:
- Cook, peel, and mash sweet potatoes.
- Mix first 6 ingredients, stir in essential oils.
- Place filling in 9×13 baking dish.
Topping Instructions:
- Mix brown sugar, flour, pecans, and cinnamon eo together.
- Spread topping over potato mixture.
- Drizzle melted butter over the topping.
- Bake at 350 degrees for 30 minutes or until brown and bubbling.
- Enjoy!
