We’re celebrating Halloween with our delicious Organic Stuffed Jack-O-Lanterns! We have sooo much fun in the kitchen as a family and anytime we can make extra nutritional food fun, it’s a win-win! Organic homegrown peppers stuffed with delicious whole foods, with chunks of cheese throughout it, and of course added to the top adds an extra bit of comfort to our recipe!

Organic Stuffed Jack-O-Lanterns
Ingredients
- 4 Organic Orange Bell Peppers
- 1 lb Ground Venison or Organic Ground Sirloin
- 1 Organic Onion; finely chopped
- 2 Organic Garlic Cloves; minced
- 1/2 tsp Organic Chili Powder
- 1 tsp Organic Adobo Seasoning
- 1 C Organic Jasmine Rice; cooked
- 2 Organic, Free-Range Eggs; slightly beaten
- 1 C Organic Cheddar Cheese; shredded
- Sea Salt
- Toothpick dipped in YL Black Pepper Essential Oil
- Organic Extra Virgin Olive Oil
- 1 Carton Organic Tomato Soup
Instructions:
- Pre-Heat Oven to 350 degrees
- Pour organic tomato soup in the bottom of your large baking dish.
- Cut off (and reserve) the top of each pepper. Remove and discard the cores and seeds. Using a sharp paring knife, carve a Jack O’Lantern face into each pepper. Drizzle the inside of each pepper with oil and season generously. Place the peppers upright in a large baking dish.
- Place venison or organic ground sirloin in large bowl; break up.
- Slightly beat 2 organic eggs, next swirl the toothpick with the essential oil on it throughout the eggs and then add to meat.
- Add Rice, onion, garlic, essential oil, and seasonings to bowl.
- Here comes the part the kids will love – after washing their hands well, let them dig into the mixture and mix all the ingredients until incorporated well.
- Add meat mixture into the peppers allowing the meat to go just above the top of the peppers.
- Sprinkle shredded cheese on top of the meat mixture.
- Place top onto the stuffed peppers.
- Cover, and bake for approximately 75 minutes. Check the meat at the top of the peppers to be sure it is thoroughly cooked.
