Stuffed Jack-O-Lantern Peppers

We just LOVE the Autumn season and all that it brings with it! Crisp air, the sweet smell of apples, beautiful colored leaves, hunting, and family time in front of the fireplace. Of course, we love the food that Autumn brings along with it as well!
We’re celebrating Halloween with our delicious Organic Stuffed Jack-O-Lanterns! We have sooo much fun in the kitchen as a family and anytime we can make extra nutritional food fun, it’s a win-win! Organic homegrown peppers stuffed with delicious whole foods, with chunks of cheese throughout it, and of course added to the top adds an extra bit of comfort to our recipe!

- 8-10 Organic Peppers
- 2 lbs Ground Venison or Organic Grass-Fed Ground Sirloin
- 2 Organic Free Range Eggs Organic Valley
- 3/4 C Organic Jasmati Rice Rice Select
- 1 small Organic Onion diced
- 1 tbsp Organic Adobo Seasoning
- 2 Cloves Organic Garlic minced
- 1 tsp Organic Smoked Paprika
- 1 drop YL Black Pepper Vitality Essential Oil wagneroils.com
- 1/2 tsp Organic All-Seasons Salt
- 32 oz Organic Tomato Soup
- Pre-Heat Oven to 350 degrees
- Place venison or organic ground sirloin in large bowl; break up.
- Slightly beat 2 organic eggs and then add to meat.
- Add Rice, onion, garlic, essential oil, and seasonings to bowl.
- Here comes the part the kids will love - after washing their hands well, let them dig into the mixture and mix all the ingredients until incorporated well.
- Cut out the tops of the peppers and set aside, then clean out the insides of the pepper.
- Cut out two small triangles for the eyes and one small triangle for the nose.
- Make a slit for the mouth to create corners of the mouth.
- Cut out the middle part of the mouth to make an opening.
- Add meat mixture into the peppers allowing the meat to go just above the top of the peppers.
- Sprinkle shredded cheese on top of the meat mixture.
- Pour organic tomato soup in the bottom of your casserole dish.
- Place top onto the stuffed peppers
- Put all peppers into your casserole dish, cover, and bake for approximately 75 minutes. Check the meat at the top of the peppers to be sure it is thoroughly cooked.
