Good afternoon friends! We shared a picture of our homemade organic broccoli rice casserole dinner last night and received a lot of interest, so we’re sharing the recipe with you! This recipe is fairly easy to make and is just delicious! We like to change up our dinners and have a couple of dinners a week that do not have organic meat in them. Organic Broccoli & Rice Casserole
- 2 C Cooked Organic Brown Rice
- 4-5 C Organic Broccoli, chopped and steamed
- 2 TBSP Organic Butter
- 1/2 of One Organic Onion, chopped
- 2 TBSP Organic Whole Wheat Flour
- 1 1/4 C Organic Raw Milk
- 1 1/2 C Organic Raw Cheese shredded
- 1 tsp Organic Dijon Mustard
- 1/2 tsp Organic Black Pepper
Method: Combine rice and broccoli in large glass bowl. Melt the butter in a medium sized pan over medium heat. Add onions and cook til translucent. Sprinkle in your flour, constantly whisking for approximately 1 minute. Whisk in milk slowly, we add about 1/4 C at a time. Add your cheese, pepper, and mustard. Continue to whisk until well combined. Simmer for approximately 4-5 minutes. Add your cheese mixture to your broccoli and rice and stir well. Serve immediately.
