Instructions
Organic Butter Crust
  1. Preheat oven to 350* In a large bowl; combine your all dry ingredients.
  2. Remove your butter from your refrigerator and quickly cut it up into cubes.
  3. With a pastry cutter; cut your butter into your dry ingredients.
  4. Blend the butter into the flour until it resembles pea-sized pieces of flour and butter combined.
  5. Remove your ice water from your refrigerator and grab a tablespoon.
  6. Start by adding 5 tbsp of water to your dough. Stir with a large spoon or spatula.
  7. Continue to add water one tablespoon at a time until you reach a sticky consistency. It takes us 13 tablespoons of iced water to reach the consistency.
  8. With your hands; form two balls of flour.
  9. Wrap your two balls of flour separately in unbleached parchment paper.
  10. Chill in the refrigerator for at least 1 hour before rolling out.
  11. On a cutting board or counter-top covered with parchment paper, sprinkle flour; roll out each ball onto the parchment paper until you’ve made a circle large enough to hang over your pie plate. After rolling out second ball; cut into strips approximately 2″ wide.
Organic Cheese Layer
  1. In a Kitchen-Aid with the paddle attachment; beat cheeses and maple syrup on medium speed until smooth.
  2. Add vanilla and egg to cheese mixture; Beat until smooth.
  3. Pour over bottom pie crust, Set aside.
Organic Apple Layer
  1. Peel, core, and slice apples into an extra thin layer.
  2. Place apples in a mixing bowl along with maple syrup, cinnamon bark essential oil, and lemon essential oil; Fold with a large spoon or spatula.
  3. Spread apple mixture evenly over the cheese layer.
  4. Sprinkle pecans, ground cinnamon, salt, and drizzle of maple syrup over apple mixture.
  5. Start to lay out your 2″ crust strips on top of the apple mixture. Be sure to criss-cross the crust strips to make a lattice pattern.
  6. Bake uncovered for approximately 50 minutes.
