Organic Extra Dark Chocolate
Cut into small chunks

Organic Maple Syrup
Hidden Springs Maple

Instructions
Preheat oven to 450*.
Line a muffin pan with unbleached parchment paper muffin liners.
Over low heat; melt butter and chocolate; stirring until smooth.
In a large glass bowl; whisk together eggs and maple syrup until fully combined.
Divide among muffin cups.
Bake for approximately 6-8 minutes or until cakes have puffed up well. You do not want the insides to fully cook, you want it to flow out of the cake.
Gently touch the sides of one of the cakes to be sure that the cake is jiggly. If it jiggles, it is done.
Place a glass plate over muffin tin and turn upside down, to release cakes.
Individually place a cake on another glass plate. Garnish with fresh organic raspberries and a sprig of mint.
Serve immediately.
