Organic Raw Peppermint Fudge

Ingredients
Instructions
  1. Combine coconut oil and coconut milk in Kitchenaid fitted with a whisk attachment; on medium-high speed beat the milk and oil together for approx 5 minutes or til glossy and thick
  2. Add the remaining ingredients to the mixer; mix on low speed until the cocoa is incorporated then change to high until everything is thoroughly combined
  3. Line a 6×6 or 8×8 glass pan with parchment paper
  4. Add peppermint essential oil to fudge; stir with a spoon. Pour chocolate mixture into prepared pan; smooth with the back of a spoon
  5. Place fudge in freezer for approx 20 minutes; until set
  6. Remove fudge from freezer; remove fudge from pan by ends of parchment paper
  7. Pull parchment paper off of fudge; place on a cutting board and slice into squares
  8. Store fudge in an airtight glass dish in the freezer
