Pour coconut milk into a small glass bowl as well as the vanilla extract; stir well
Stir in the chia seeds; let sit for approximately 30 minutes only stirring once or twice
Once your chia seeds have expanded; drop some of the coconut mixture into the bottoms of the Popsicle molds
Next, drop in a few raspberries; gently tap the molds on the counter to allow the coconut mixture and berries to drop down into the molds
Add more coconut mixture on top of your raspberries
Layer more raspberries on top of the coconut mixture; again, tap the molds gently on the counter to allow the coconut mixture and raspberries to drop down into the molds
Add another layer of coconut mixture; continuing to layer until you have reached the top of the molds
