Our Thanksgiving feast would not be complete without our Organic Sweet Potato Casserole! You will feel like you’re eating dessert instead of your main course or side dish when you sink your teeth into our delicious casserole!

We have incorporated organic sweet potatoes in every course; especially dinner.  Don’t get us wrong, we still love our organic russet potatoes, but we have enjoyed replacing them with sweet potatoes!  There is nothing like baked sweet potato fries, baked sweet potatoes, and sweet potato home fries!

Our Thanksgiving and Christmas feast would not be complete with adding our delicious casserole to it!  If you want to get your children to eat sweet potatoes, this is a good way to start!  Our daughters absolutely love it!

Did you know that organic sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid, and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2, and phosphorus.

Like the common potato, sweet potatoes also have anti-inflammatory properties, although they do not belong to the same family as common potato. This is primarily due to the presence of beta-carotene, vitamin-C and magnesium. It is equally effective in curing internal and external inflammation.

Sweet Potato Mixture
  1. Preheat oven to 350 degrees; Cook, peel, and mash sweet potatoes.
  2. Mix first 6 ingredients; stir in Lemon and Cinnamon Bark essential oil.
  3. Place filling in 9x9 casserole dish.
Topping
  1. Mix flour, pecans, brown sugar, and cinnamon bark essential oil.
  2. Spread topping mixture over sweet potato mixture.
  3. Drizzle melted butter over topping.
  4. Bake for 30 minutes or until brown and bubbling.
  5. Enjoy!
