Nothing says summertime like the sweet taste of organic homegrown strawberries! Our recipe is simple, delicious, and will soon become one of your favorite go-to summer recipes!
Combine all ingredients into Vitamix or high powered blender; mix well until combined, scrape down the sides and blend for another minute. Allow batter to rest for 5 minutes.
In a medium size frying pan; melt a small amount of butter.
Pour enough batter in your pan to thinly and evenly cover the pan (you want one even and thin layer).
Using a spatula, push the batter around the perimeter down and towards the center to avoid burning.
After approximately 1 minute (you want the crepe to be lightly brown), use spatula to flip it over and cook on the other side.
Cook for 1 more minute until the bottom is golden brown. Remove from the pan.
Continue cooking the remainder of the batter.
Organic Yogurt Filling
Combine all ingredients into Vitamix or high powered blender; blend until fully combined. Set aside.
Assembling the Crepes
Lay out one crepe at a time on a glass plate
Scoop out a dollop of yogurt filling and spread it out evenly on top of the crepe
Add sliced strawberries to the top of the yogurt filling; roll the crepes up and set aside
Continue to assemble all of the crepes with yogurt filling and strawberries
Serve crepes with a small dash of homemade powdered sugar and a sprig of organic mint as a garnish.

P.S If you do not want to serve all of the crepes at once, they keep very well in the freezer. Simply add a piece of unbleached parchment paper between each crepe and freeze in a glass dish.
