Organic Raspberry Chia Pops

We LOVE organic raspberries!  We grow 10 different varieties of organic raspberries in about a 60′ patch.  Our raspberries actually grow next to our organic grape vineyard.  It is amazing how much they seem to like each other! They both grow so well and provide us with a bountiful harvest every year!

Growing raspberries is fairly easy to do!  We love them because like strawberries, they keep producing more and more plants each year.  You want to make sure you have a lot of room for your raspberries because they multiply fast.  We actually started a second patch last year because our 60′ patch is filled right in with a lot of plants almost 6 feet tall.  They are wonderful!

As you can probably imagine, we make a lot of recipes with raspberries.  Of course, we eat a lot of them fresh.  But, we also make jam, freeze them, add them to muffins, ice cream, cake, smoothies, fruit juice, etc.  There are an endless amount of recipes that raspberries can be used in.

Today, we wanted to share a favorite of ours; Organic Raspberry Chia Pops!  Our family loves organic chia seeds.  They are so healthy for you!

Ingredients

Instructions
  1. Pour coconut milk into a small glass bowl as well as the vanilla extract; stir well
  2. Stir in the chia seeds; let sit for approximately 30 minutes only stirring once or twice
  3. Once your chia seeds have expanded; drop some of the coconut mixture into the bottoms of the Popsicle molds
  4. Next, drop in a few raspberries; gently tap the molds on the counter to allow the coconut mixture and berries to drop down into the molds
  5. Add more coconut mixture on top of your raspberries
  6. Layer more raspberries on top of the coconut mixture; again, tap the molds gently on the counter to allow the coconut mixture and raspberries to drop down into the molds
  7. Add another layer of coconut mixture; continuing to layer until you have reached the top of the molds
  8. Insert Popsicle sticks into the molds
  9. Freeze for approximately 6 hours
  10. Enjoy!
