Happy Tuesday Friends!  We’ve been busy the last week restocking our pantry and refrigerator with our homemade organic yummies aka our favorite foods!

We love making our homemade organic raw energy balls!  They are delicious, very healthy, and a quick easy snack on the go!  We have several different energy ball recipes, but this one is one of our all-time favorites!

Organic Raw Cacao Energy Balls

Ingredients:

  • 2 C Organic Steel Cut Oats (Steel cut holds together better than Old Fashion or Quick Oats)
  • 1/2 C Organic Crunchy or Creamy Peanut Butter
  • 1/3 C Organic Maple Syrup
  • 1 TBSP Organic Raw Chia Seeds, we like TruVibe Organics
  • 1/3 C Organic Extra Dark or Dark Chocolate, chopped
  • 2 TBSP Organic Raw Flaxseeds, ground, we like TruVibe Organics
  • 3 TBSP Organic Raw Cacao Powder, we like TruVibe Organics

Method:

  1. Mix together Peanut Butter and Maple Syrup until combined well.
  2. Grind Flaxseeds, stir til combined.
  3. Add Cacao Powder, stir til combined.
  4. Add Steel cut oats and chia seeds, mix well.
  5. Add organic dark chocolate, stir til combined well.
  6. Refrigerate for at least 1/2 hour.
  7. Roll into balls.
  8. Store balls in covered glass dish in the refrigerator.

Now for our Homemade Organic Granola Cereal!  Who doesn’t love Granola??  Homemade granola is the absolute best!  Your home will smell amazing and your tummy will be in love with this recipe!  Our two daughters just love, love, love granola cereal and our energy balls.  We go through a lot of granola!

Homemade Organic Granola Cereal

Ingredients:

  • 3 C Organic Rolled Oats
  • 2 C Organic Raw Nuts (we like Pecan and Almond)
  • 3/4 C Organic Shredded Unsweetened Coconut
  • 1 TBSP Organic Vanilla, we like Simply Organic
  • 1/4 C Organic Unrefined Coconut Oil, melted
  • 1/3 C Organic Maple Syrup
  • 3/4 tsp Pink Himalayan Salt
  • 2 tsp Organic Cinnamon, we like Simply Organic
  • 1/2 C  Organic Raw Goji Berries
  • 1/4 C Organic Unsweetened Dried Cranberries

Method:

  1. Preheat oven to 250* degrees
  2. Combine all ingredients except for dried fruit, mix well
  3. Line a large baking sheet with parchment paper
  4. Spoon out granola onto your baking sheet
  5. Bake for 1 hour, stirring approximately every 20 mins
  6. Remove granola from oven, let cool
  7. Stir in dried fruit
  8. Store in an airtight container for up to 2 weeks.
  9. Enjoy!
